Aloo Paratha Recipe

- 3 Potatoes large
- 1 inch Ginger finely chopped
- 6-8 Garlic cloves finely chopped
- 2 Onions medium; finely chopped
- 3-5 Green chilis finely chopped
- 1 tbsp Lime juice
- 1 cup Coriander leaves finely chopped
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1 tsp Red Chili Powder
- 2 cups All-purpose Flour
- Water as needed
- Salt to taste
- Vegetable oil
Prepare the dough
First, in a large mixing bowl, take the flour and add salt to taste. Add some oil and start to mix.
Next, after combining the flour, salt, and oil nicely, add the water occasionally in small quantities and kneed.
Kneed until a soft yet tight and smooth dough is prepared. This should take around 8-10 minutes.
Apply some oil on the dough and keep it aside by covering it.
Prepare the Aloo stuffing
Boil the potatoes in a boiling pot or a pressure cooker until the potatoes are cooked to perfection.
Take them out onto a plate or large bowl and let them cool.
Next, peel them and mash them well until no lumps are present.
Now, add the finely chopped onions, garlic, ginger, green chilis, and coriander leaves.
Combine them nicely with the mashed potatoes.
Add the cumin powder, coriander powder, and red chili powder.
Mix and combine all the ingredients well.
Next, divide the mashed potato mix or the stuffing into 8 equal parts.
Prepare the dough ball
Take a tawa or a frying pan and add some.
Heat the oil until hot.
While the oil is heating up, take a porting of the dough for the paratha and flatten it with your fingers.
Next, hold it in between your fingers and with the help of them make it into a small bowl like shape.
Add in the stuffing and then close the ends of the dough taking it in between the palm and the fingers.
Continue rotating and closing it to secure the stuffing inside it.
Then roll the dough ball flat the stuffing until a certain size is achieved.
Prepare the paratha
Roll the dough ball flat with a rolling pin and give it a triangular or circle shape.
Now, put the paratha on the tawa and fry it from both the sides. Keep the flame on medium and make sure not to burn it.
Repeat the process for all the parathas and then transfer them onto a kitchen tissue-covered plate.
Garnish it with some butter for more flavour.
