1 tbsp chat masala
½ black pepper powder
1 tbsp red chili powder
3 tbsp Cornstarch
Wash and Cut Potatoes Wash the potatoes and peel them well. Cut the potatoes into 1.5-2 inch thick slices. Make sure all the potato sticks have a uniform thickness.
Soak potato slices Now allow the potato slices to soak in a bowl filled with cold water and ice. Rinse the slices well in the water for 5 minutes.
Dry Potato slices Now drain the excess water from the potato slices and spread those in a dry cloth. Gently rub the slices with a cloth to remove extra water.
Marinate potato slices After dry blanching the potatoes, marinate the potatoes with cornstarch, salt, red chilli powder, black pepper powder. Refrigerate it for 1 hour.
Deep Fry Potato slices Now deep fry these potato sticks in a heavy bottom pan and heat them on a medium to high flame. Transfer those to a wire rack 5 minutes after they turn golden.
After 10 minutes, refry the fried sticks at about 175 degrees Celsius until a crispy crust is formed. Remove them from the oil, sprinkle chat masala & red chili powder over it, and serve it hot.
