Potatoes
2 cups maida, ghee, ajwain
onions, peas, ginger, chilies
fennel, jeera, coriander seeds, salt

refined oil, coriander leaves, ketchup

Peel out the potatoes. Boil them well. Add oil to a pan. Add hing, fennel, whole jeera, and whole coriander to the oil and allow it to sputter until the aroma comes out.

Add chopped ginger, green chilies, frozen peas, & onion to the pan & mix them well. Add boiled potatoes, & smash them a little.

Now add salt, dry mango powder, garam masala, & black pepper powder. Add chopped coriander and. Saute all these well. Keep it aside.

Take all-purpose flour in a bowl. Add a pinch of salt, ajwain & ghee to the maida. Mix all the ingredients well. Ghee will give a crispy crust to the maida.

Add water to the flour in batches. Knead the maida well into a dough. Now brush ghee into the dough. Cover it in a wet cloth and keep it aside.

After 1 hour, divide the dough into small portions. Now spread oil on a flat surface. Roll them into an oval-shaped sheet with thickened margins. Cut them into halves.
Prepare the crust
Take one-half of the sheet and add water to the straight sides. Fold them into cones. Add the potato filling and press & stick the open margins. Your Samosas are ready.

Heat oil & keep it on low flame. Now fry the samosas in refined oil or ghee. Fry both the sides until its crispy brown. Take out the samosas. Serve these samosas with ketchup.
